Top easy homemade waffles with citrussy smoked salmon, capers and a tangy crème fraîche drizzle for a festive breakfast

  • 110g Co-op self raising flour
  • 1 heaped tsp baking powder
  • 1 tsp dried thyme
  • 150ml Co-op British whole milk
  • 1 Co-op British free range egg
  • 15g Co-op unsalted butter, melted and cooled
  • 4 tbsp Co-op reduced fat crème fraîche
  • Juice of ½ clementine
  • 120g pack Co-op watercress, spinach and rocket salad
  • 2 x 100g packs Co-op Irresistible smoked salmon with clementine (in store 12 Dec)
  • 4 tsp drained jarred capers


  1. Mix the flour, baking powder and thyme in a bowl
  2. Whisk the milk, egg and butter together, then add to the dry ingredients, whisking until you have a thick batter
  3. Heat a waffle pan or waffle maker
  4. Add half the batter and cook for 3-4 mins, until fluffy and just golden
  5. Repeat with the rest of the batter, to make 2 waffles in total
  6. While you’re cooking the waffles, combine the crème fraîche with the clementine juice and season
  7. Divide the salad between 4 plates, then add half a waffle each
  8. Top with some smoked salmon and capers, then drizzle with the crème fraîche to serve
