Ingredients
- 110g Co-op self raising flour
- 1 heaped tsp baking powder
- 1 tsp dried thyme
- 150ml Co-op British whole milk
- 1 Co-op British free range egg
- 15g Co-op unsalted butter, melted and cooled
- 4 tbsp Co-op reduced fat crème fraîche
- Juice of ½ clementine
- 120g pack Co-op watercress, spinach and rocket salad
- 2 x 100g packs Co-op Irresistible smoked salmon with clementine (in store 12 Dec)
- 4 tsp drained jarred capers
Method
- Mix the flour, baking powder and thyme in a bowl
- Whisk the milk, egg and butter together, then add to the dry ingredients, whisking until you have a thick batter
- Heat a waffle pan or waffle maker
- Add half the batter and cook for 3-4 mins, until fluffy and just golden
- Repeat with the rest of the batter, to make 2 waffles in total
- While you’re cooking the waffles, combine the crème fraîche with the clementine juice and season
- Divide the salad between 4 plates, then add half a waffle each
- Top with some smoked salmon and capers, then drizzle with the crème fraîche to serve
