We’ve taken the main elements of Welsh rarebit — a cheesy sauce, cooked with beer then melted on toast — and turned them into these indulgent muffins

Ingredients

  • 125g Co-op self raising flour
  • 125g Co-op plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp mustard powder
  • 75g Co-op unsalted butter, melted
  • 1 Co-op British free range egg, beaten
  • 250ml Co-op golden ale
  • 1 tbsp Worcestershire sauce
  • 125g Co-op Welsh mature Cheddar, grated (or use any mature Cheddar you like)
  • Chutney, to serve (optional)

Method

  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Line a 12-hole muffin tin with paper cases
  3. Sift together the flours, baking powder, bicarb, mustard powder and a little seasoning
  4. In a jug, stir together the butter, egg, ale and Worcestershire sauce
  5. Make a well in the centre of the flour and pour in the wet ingredients, along with most of the cheese
  6. Gradually stir, bringing in the sides, until combined — but be careful not to overmix
  7. Spoon into the prepared muffin cases
  8. Sprinkle over the remaining cheese and bake in the oven for 20 mins
  9. Allow to cool slightly, then serve with your favourite chutney on the side, if you like
