
Welsh rarebit muffins

We’ve taken the main elements of Welsh rarebit — a cheesy sauce, cooked with beer then melted on toast — and turned them into these indulgent muffins

Ingredients
- 125g Co-op self raising flour
- 125g Co-op plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp mustard powder
- 75g Co-op unsalted butter, melted
- 1 Co-op British free range egg, beaten
- 250ml Co-op golden ale
- 1 tbsp Worcestershire sauce
- 125g Co-op Welsh mature Cheddar, grated (or use any mature Cheddar you like)
- Chutney, to serve (optional)
Method
- Preheat the oven to 200°C/fan 180°C/gas 6
- Line a 12-hole muffin tin with paper cases
- Sift together the flours, baking powder, bicarb, mustard powder and a little seasoning
- In a jug, stir together the butter, egg, ale and Worcestershire sauce
- Make a well in the centre of the flour and pour in the wet ingredients, along with most of the cheese
- Gradually stir, bringing in the sides, until combined — but be careful not to overmix
- Spoon into the prepared muffin cases
- Sprinkle over the remaining cheese and bake in the oven for 20 mins
- Allow to cool slightly, then serve with your favourite chutney on the side, if you like
