Ingredients

  • 4 thick slices Co-op crusty white cob
  • 2 Co-op British eggs
  • 2 tbsp Co-op semi skimmed milk
  • 5g Co-op unsalted butter
  • 1 tsp Co-op olive oil
  • 4 tsp blackcurrant jam
  • 6 squares Co-op Fairtrade white chocolate with crisped rice
  • 1 fresh mango, peeled, stoned and sliced

Method

  1. Cut the slices of white cob in half diagonally
  2. Crack the eggs into a bowl, add the milk and whisk
  3. Dip the bread into the egg mixture to coat
  4. Heat the butter and olive oil in a frying pan and fry the eggy bread for a few mins on one side, until golden
  5. Divide the jam between the cooked sides of half the toast
  6. Chop the white chocolate and scatter over the jam
  7. Press the other bread halves on top, cooked side down
  8. Fry again on each side for a few mins, until the chocolate has melted and the bread is golden
  9. Serve with sliced mango
