Ingredients

  • 150g Co-op plain flour
  • 3 Co-op British eggs
  • 280ml Co-op semi-skimmed milk
  • 2 tbsp vegetable oil
  • 1 1/2 tbsp English mustard
  • 2 x 100g packs Co-op British cooked thin sliced beef
  • Handful rocket leaves

Method

  1. Preheat the oven to 230°C/fan 210°C/Gas 8
  2. Whisk the flour, eggs and milk until you have a smooth batter
  3. Season and set aside for 30 mins to rest (or overnight, if you like)
  4. Divide 1 tbsp of the oil between 4 holes of a Yorkshire pudding tray and put in the oven
  5. When the oil is shimmering, divide half the batter between the 4 holes and bake in the oven for 20 mins, or until golden and well risen
  6. Remove from the oven and leave to cool
  7. Repeat with the rest of the oil and batter to make 8 Yorkshires in total
  8. When cool, roll the Yorkies gently with a rolling pin to flatten the sides down
  9. Spread with some of the mustard, then top with a slice of beef and some rocket
  10. Roll up burrito-style then secure with a cocktail stick
