Ingredients

  • Co-op Diced Pancetta 50g
  • x1 Onion, finely diced
  • x2 cloves of Garlic, crushed
  • 2 tins Co-op Chickpeas
  • 1 whole egg + 2 yolks
  • 1 tin Co-op Sweetcorn
  • 30g Parmesan
  • 1 tsp unsalted butter
  • Co-op Cracked Black Pepper

Optional – To serve:

  • x1 bag Co-op Rocket
  • Co-op Irresistible White Sourdough Baguette

Ingredients may vary. Always check packaging for allergen information.

Method

Method 1. Add the pancetta into a cold pan, then heat slowly. Once the pancetta is browned, remove and set aside but leave the fat. Cook the onion in the same pan until translucent, then add the garlic. Reduce the heat to low and add the drained chickpeas with about 100ml of the chickpea water to help loosen. Season with black pepper.

  1. While the chickpeas are warming, crack the egg and egg yolks into a bowl, then grate the Parmesan to mix. Loosen with another 50ml of chickpea water and add any liquid from the pan to help warm the eggs. Remove the pan from heat and add the egg/cheese mixture to the pan while mixing, making sure not to scramble it. Once incorporated, return to heat on low, cooking the chickpeas slowly, until the sauce has thickened enough to coat the back of a spoon.

  2. To finish, serve on a plate or bowl, scatter the cooked pancetta on top and garnish with a handful of rocket. You can eat it on its own, or with a bit of crusty bread.
