Cream cheese & pepper pinwheels


These tasty vegetarian bites are made with only four ingredients

  • 2 x 200g packs Co-op light soft cheese
  • 280g jar Co-op chargrilled peppers,
  • 1 tbsp oil from the jar reserved, drained and finely chopped
  • 3 Co-op tomato & herb wraps


  1. Put the soft cheese into a large bowl and mix with a spatula to soften
  2. Mix the 1 tbsp oil from the peppers into the cheese until smooth, season to taste, then mix in the chopped peppers
  3. Lay the wraps on a clean surface and divide the mixture between them, spreading it in a thick, even layer up to the edges
  4. Roll up firmly, trying not to squeeze the filling out
  5. Wrap the rolls in cling film and chill for 20 mins, or until needed
  6. To serve, use a sharp knife to cut the rolls into 2cm slices, and arrange on a platter
