  • 235g Co-op Sunblush® tomato flatbread
  • 100g Co-op reduced fat crème fraîche
  • 120g Co-op Irresistible beech & oak smoked salmon
  • 250g pack Co-op British cooked beetroot, cut into wedges
  • Handful chives, chopped


  1. Cook the flatbread according to the pack instructions
  2. Allow to cool for 5 mins, then cut into 12 squares, 2-3cm across
  3. Divide the crème fraîche between the squares
  4. Tear the smoked salmon into wide strips, then curl one on top of each flatbread
  5. Top with the beetroot wedges, followed by a sprinkling of chives and some freshly ground black pepper
