Ingredients

  • 1 tbsp Co-op olive oil
  • 4 Co-op British chicken thighs
  • 1 red onion, thinly sliced
  • 2 garlic cloves, crushed
  • 1 red chilli, deseeded and finely chopped (optional)
  • 2 Co-op Irresistible pork sausages, cut into bite-sized chunks
  • 400g can Co-op chopped tomatoes
  • 100ml chicken stock, made with ½ stock cube
  • 400g can Co-op cannellini beans, drained and rinsed
  • 1 rosemary sprig, leaves only, roughly chopped (optional)

Method

  1. Heat the olive oil in a large frying pan over a medium-high heat
  2. Once hot, season the chicken thighs, then put in the pan skin-side down
  3. Cook for 8-10 mins, until the skin is golden and crisp
  4. Spoon off most of the fat from the pan and turn the thighs over
  5. Add the onion, garlic, chilli, if using, and sausage, then cook for 5 mins, stirring occasionally, until the onion is starting to soften and the sausagemeat is lightly golden
  6. Pour in the tomatoes and stock, season, then simmer for a further 15 mins, adding the beans for the final 5 mins of cooking
  7. Check the chicken is cooked through, then sprinkle over the rosemary, if using, and serve
