Crispy chicken thighs, sausages and a rich tomato sauce come together in this speedy version of a classic French stew

Ingredients
- 1 tbsp Co-op olive oil
- 4 Co-op British chicken thighs
- 1 red onion, thinly sliced
- 2 garlic cloves, crushed
- 1 red chilli, deseeded and finely chopped (optional)
- 2 Co-op Irresistible pork sausages, cut into bite-sized chunks
- 400g can Co-op chopped tomatoes
- 100ml chicken stock, made with ½ stock cube
- 400g can Co-op cannellini beans, drained and rinsed
- 1 rosemary sprig, leaves only, roughly chopped (optional)
Method
- Heat the olive oil in a large frying pan over a medium-high heat
- Once hot, season the chicken thighs, then put in the pan skin-side down
- Cook for 8-10 mins, until the skin is golden and crisp
- Spoon off most of the fat from the pan and turn the thighs over
- Add the onion, garlic, chilli, if using, and sausage, then cook for 5 mins, stirring occasionally, until the onion is starting to soften and the sausagemeat is lightly golden
- Pour in the tomatoes and stock, season, then simmer for a further 15 mins, adding the beans for the final 5 mins of cooking
- Check the chicken is cooked through, then sprinkle over the rosemary, if using, and serve
