Ingredients

  • 30g Co-op unsalted butter
  • 2 tbsp Co-op sunflower oil
  • 2 onions, very thinly sliced
  • 500g green beans, cut into small chunks
  • 4 tbsp Co-op rendang paste
  • 3 x 250g packs Co-op microwave pilau rice
  • 3 x 250g packs Co-op Irresistible Hereford beef rump steak
  • ½ x 25g pack coriander, finely chopped
  • Co-op mango chutney, to serve

Method

  1. Heat the butter and half the sunflower oil in a large frying pan and cook the sliced onion, over a medium-high heat for 8-10 mins, until crispy
  2. Remove the onion from the pan with a slotted spoon and add the green beans, along with a splash of water
  3. Fry for 2 mins, then stir in 3 tbsp of the rendang paste
  4. Cook for 1 minute more
  5. Add the rice, another splash of water and half the fried onion
  6. Cook for a few minutes, stirring, and season
  7. Cover and set over a low heat while you cook the steaks
  8. Mix together the remaining curry paste and oil, then brush over the steaks
  9. Heat a nonstick frying pan and cook for 3-4 mins each side for medium-rare, or according to your taste, then rest for 2 mins
  10. Stir the coriander into the rice and spoon onto plates
  11. Slice the steaks and divide between the piles of rice
  12. Top with the remaining onion, then serve with a spoonful of mango chutney on the side
