Spice up your eggs with this Middle Eastern dish packed with greens

Ingredients
- 1 tbsp Co-op olive oil
- 1 large courgette, halved lengthways and sliced
- 4 Co-op spring onions, sliced
- 1/2 Co-op British savoy cabbage, shredded
- 200g can Co-op chopped tomatoes
- 60g Co-op British baby spinach
- 150g Co-op frozen peas
- 4 Co-op British eggs
- Pinch of smoked paprika
- 1 tbsp sweet chilli sauce
Method
- Heat the olive oil in a large frying pan and sauté the courgette and the white part of the spring onion for 4-5 mins
- Add the cabbage and cook for another 4 mins, then add the chopped tomatoes
- Bring to a simmer
- Stir in the spinach and peas, then cook for 5 mins more
- Season to taste
- Make 4 little wells in the vegetables and crack an egg into each
- Cover with a lid or large piece of foil and cook for 5-6 mins until the eggs are cooked through
- Sprinkle with the paprika and the remaining spring onion
- Drizzle with the sweet chilli sauce and serve
