  • 1 tbsp Co-op olive oil
  • 1 large courgette, halved lengthways and sliced
  • 4 Co-op spring onions, sliced
  • 1/2 Co-op British savoy cabbage, shredded
  • 200g can Co-op chopped tomatoes
  • 60g Co-op British baby spinach
  • 150g Co-op frozen peas
  • 4 Co-op British eggs
  • Pinch of smoked paprika
  • 1 tbsp sweet chilli sauce


  1. Heat the olive oil in a large frying pan and sauté the courgette and the white part of the spring onion for 4-5 mins
  2. Add the cabbage and cook for another 4 mins, then add the chopped tomatoes
  3. Bring to a simmer
  4. Stir in the spinach and peas, then cook for 5 mins more
  5. Season to taste
  6. Make 4 little wells in the vegetables and crack an egg into each
  7. Cover with a lid or large piece of foil and cook for 5-6 mins until the eggs are cooked through
  8. Sprinkle with the paprika and the remaining spring onion
  9. Drizzle with the sweet chilli sauce and serve
