Ingredients

  • 5 bananas (Why not go For Fairtrade?)
  • 5 tbsp brown sugar (Why not go For Fairtrade?)
  • 1 tbsp ground cinnamon
  • 150ml whole milk
  • 250g vanilla ice cream
  • 100ml dark rum
  • 2 tbsp dark chocolate chips (Why not go For Fairtrade?)
  • 4 sprigs mint

Method

  1. Preheat the grill to high.
  2. Split the bananas down the middle lengthways, with the skin still on.
  3. Combine the brown sugar and the cinnamon. Generously scatter the sugar mix over the exposed banana. Place under the grill on a tin foil lined tray, sugar side up, for about 5 minutes until the sugar caramelises to a deep brown colour. Leave the bananas to cool - it is important to cool the bananas as the heat will affect how it blends.

  5. Once cool, scoop 4 of the bananas out of their skins and bung into a blender with the milk, ice cream, rum and chocolate chips. Blend to a smooth, thick consistency.
  6. Pour the shake into 4 x 250ml glasses. Remove the last banana halves from the peel and slice across the middle to get four pieces.
  7. Garnish your glasses with the banana, a sprig of mint and a few chocolate chips then serve with big straws and drink up.
