Honey-roast root veg & citrus platter


This vibrant salad makes a superb side for a variety of main courses

  • 2 large Co-op British carrots, cut into batons
  • 2 large Co-op British parsnips, cut into batons
  • 2 small oranges, 1 thinly sliced,
  • 1 zested and juiced
  • 1 small lemon, thinly sliced
  • 2 tbsp Co-op extra virgin olive oil
  • 3 tbsp Co-op Honest Value clear honey
  • 4 thyme sprigs, leaves picked
  • 70g Co-op wild rocket
  • 50g pomegranate seeds


  1. Cook the carrot and parsnip in a pan of boiling water for 7-8 mins, until starting to soften
  2. Drain and leave to steam dry
  3. Preheat the oven to 220°C/fan 200°C/gas 7
  4. Tip the veg onto a large baking tray with the orange and lemon slices, and drizzle with half the oil
  5. Roast for 20 mins, then drizzle with 2 tbsp of the honey and roast for 10 mins more, until golden
  6. Whisk together the remaining oil and honey, the orange zest and juice, and the thyme
  7. Season
  8. Layer the roasted veg and citrus on a platter with the rocket, add the pomegranate seeds and drizzle with the orange dressing to serve
