Ingredients
- 1 tbsp Co-op Irresistible cold pressed rapeseed oil
- 390g pack Co-op pork belly slices
- 1 red chilli, chopped
- 3 tbsp Co-op Irresistible Seville orange medium cut marmalade
- Juice of 1 clementine
- 1 Co-op cucumber, peeled into long strips
- 12 rosemary sprigs, lower leaves stripped
Method
- Heat the rapeseed oil in a large nonstick frying pan over a medium-high heat
- Lay the pork belly, fatty side down, in the pan
- Cook for 8-12 mins, turning, until golden
- Remove from the pan, set aside for 5 mins, then cut into 2cm cubes and return to the pan over a medium heat
- Season and add the chilli, marmalade and clementine juice
- Cook for 2-3 mins, stirring constantly, until sticky and reduced
- Take off the heat and leave to rest for 5 mins
- Meanwhile, fold up the cucumber strips and put one on top of each pork piece, then skewer with the rosemary sprigs
