Melon and mozzarella skewers with balsamic

  • 1/2 Co-op cantaloupe melon
  • 2 x 225g packs Co-op Italian mozzarella
  • 12 mint leaves
  • Co-op glaze with balsamic vinegar of Modena, to drizzle


  1. Remove the seeds from the melon
  2. Peel, then cut the flesh into 12 pieces
  3. Drain the mozzarella, then tear or slice into 12 and place onto each piece of melon
  4. Top with a mint leaf and secure with a cocktail stick, then chill until needed
  5. Drizzle with the balsamic vinegar to serve
