Ingredients

  • 6 eggs, beaten
  • 30g butter
  • 2 grilled peppers from a jar, chopped
  • 1 tomato, grated
  • 2 pitta breads, torn and toasted in the oven
  • 100g feta cheese
  • Chopped parsley

Method

  1. Heat the butter in a frying pan on a medium heat, then add the chopped peppers and tomato
  2. Cook for 10 minutes or so, allowing the mix to thicken and soften
  3. Then lower the heat and add the beaten eggs, gently mixing and cooking slowly
  4. When the eggs are very softly set, crumble over the feta and leave to stand for 1 minute
  5. Then garnish with the chopped parsley and serve with the toasted pitta
