  • 100g caster sugar
  • 100ml water
  • 2 oranges
  • 75g Co-op unsalted butter
  • 150g icing sugar
  • 2 tbsp Co-op Prosecco
  • 4 vanilla fairy cakes


  1. Put the sugar, water and the juice of 1/2 an orange juice in a pan
  2. Heat gently to dissolve the sugar
  3. Thinly slice the other orange half, then add to the pan and bubble on a low heat for 5-10 mins, until the liquid reduces and turns a caramel colour
  4. Meanwhile, beat the butter until pale and fluffy
  5. Add the icing sugar and beat until smooth, then add the Prosecco, the zest of 1 orange and the juice of 1/2 orange and mix
  6. Top the fairy cakes with the icing and decorate with the caramelised orange pieces
