Ingredients

  • 1 tbsp Co-op olive oil
  • 1/2 onion, chopped
  • 1 Co-op British leek, chopped
  • 2 Co-op British carrots, chopped
  • 1 tsp dried oregano
  • 400g can Co-op chopped tomatoes
  • 400ml vegetable stock (made with 1/2 stock cube)
  • 1/2 x 400g can Co-op cannellini beans, drained and rinsed
  • 1/2 x 140g pack Co-op British pulled ham hock
  • Handful flat leaf parsley, roughly chopped
  • Co-op Irresistible sourdough (optional)

Method

  1. Heat the oil in a large pan and cook the onion for 2-3 mins
  2. Add the leek, carrot and oregano, and cook for 5 more mins, stirring occasionally
  3. Pour in the tomatoes and stock, add the beans, stir and season
  4. Bring to the boil, then reduce to a simmer and cook for 15 mins, until thickened
  5. Serve the soup topped with the ham hock and parsley, and the sourdough on the side, if using
