Ingredients
- 1 tbsp Co-op olive oil
- 1/2 onion, chopped
- 1 Co-op British leek, chopped
- 2 Co-op British carrots, chopped
- 1 tsp dried oregano
- 400g can Co-op chopped tomatoes
- 400ml vegetable stock (made with 1/2 stock cube)
- 1/2 x 400g can Co-op cannellini beans, drained and rinsed
- 1/2 x 140g pack Co-op British pulled ham hock
- Handful flat leaf parsley, roughly chopped
- Co-op Irresistible sourdough (optional)
Method
- Heat the oil in a large pan and cook the onion for 2-3 mins
- Add the leek, carrot and oregano, and cook for 5 more mins, stirring occasionally
- Pour in the tomatoes and stock, add the beans, stir and season
- Bring to the boil, then reduce to a simmer and cook for 15 mins, until thickened
- Serve the soup topped with the ham hock and parsley, and the sourdough on the side, if using
