Ingredients
- 350g Co-op Honest Value penne
- 1 tsp Co-op olive oil
- 10g Co-op anchovies in olive oil, drained and chopped
- ½ tbsp chilli flakes, plus extra to garnish (optional)
- 440g jar Co-op Honest Value tomato & basil pasta sauce
- 300g can Co-op Honest Value garden peas in water, drained
- 20g Co-op pitted black hojiblanca olives, halved
- 12 sundried tomatoes, drained and chopped
Method
- Cook the pasta according to the pack instructions, reserving half a mugful of the cooking water
- Heat the oil in a saucepan over a medium heat
- Cook the anchovies and chilli flakes, if using, for 1-2 mins, until broken down into a paste
- Add the pasta sauce, peas, olives, sundried tomatoes and reserved cooking water
- Bring to a simmer, stirring constantly
- Season with black pepper and cook for 5 mins, or until the peas are heated through
- Stir through the cooked pasta and divide between bowls
- Sprinkle with the extra chilli, if using, to serve
