Smashed new potato roasties

  • 500g Co-op baby pearl potatoes, large ones halved
  • 6 rosemary sprigs, 3 torn and
  • 3 finely chopped
  • 2 tbsp Co-op olive oil


  1. Put the potatoes in a large pan and cover them with boiling water
  2. Half-cover with a lid and boil for 15 mins, until tender
  3. Preheat the grill to high
  4. Drain the potatoes in a colander
  5. Leave to steam for 2 mins, until visibly dry, then tip onto a large baking tray
  6. Add the torn rosemary sprigs, drizzle with the oil and toss to coat
  7. Grill for 10 mins, tossing every 2-3 mins, until the potatoes are crisp and golden
  8. Sprinkle with chopped rosemary and toss to combine
  9. Season to taste before serving
