  • 1 pack Co-op mixed peppers, sliced
  • 2 red onions, thinly sliced
  • 2 garlic cloves, sliced
  • 1 tbsp Co-op olive oil
  • 1kg Co-op British chicken thighs
  • 2tsp smoked paprika
  • 400g can Co-op Italian chopped tomatoes
  • 75g drained black olives
  • 400g can cannellini beans, drained and rinsed
  • 2 tbsp chopped flat leaf parsley
  • Crusty bread, to serve


  1. Preheat the oven to 180°C/fan 160°C/gas 5
  2. Toss the peppers, onion and garlic with the oil in a roasting tin
  3. Arrange the chicken thighs over the top and bake for 25 mins
  4. Lift the chicken thighs out of the tin, then stir in the remaining ingredients, except the parsley
  5. Add the chicken back on top, then return to the oven for a further 30 mins
  6. Garnish with the parsley, if using, and serve with crusty bread
