Big Bag Option


  • 300g Co-op penne
  • 1 red onion, finely chopped
  • 10-12 Co-op sundried tomatoes in oil, chopped, plus 1 tbsp oil from the jar
  • 2 garlic cloves, crushed
  • 30g Co-op wild rocket
  • Zest and juice of 1⁄2 lemon (optional)


  1. Cook the pasta according to the pack instructions
  2. While the pasta is cooking, fry the onion in the oil from the sundried tomatoes for 5 mins or until softened
  3. Put the onion into a food processor with the garlic, sundried tomatoes and half the rocket, and blitz to make a paste
  4. Drain the pasta, reserving 200ml of the cooking water
  5. Fold the sundried tomato paste into the pasta, along with the rest
  6. of the rocket and the lemon zest and juice, if using
  7. Gradually add the cooking water from the pasta until everything is combined and the pasta is coated with a light, silky sauce and season to taste
