  • 4 medium sweet potatoes, cut into 3cm chunks
  • 2 tbsp Co-op olive oil
  • 3 mixed peppers, cut into large chunks
  • 4 large tomatoes, roughly chopped
  • 120g Co-op Cypriot halloumi, diced
  • 4 tbsp Co-op red pesto
  • Basil, to serve


  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Put the sweet potato in a roasting tin, drizzle over 1 tbsp olive oil and bake for 10 mins
  3. Add the peppers to the tin along with the remaining oil and bake for another 20 mins
  4. Stir in the tomatoes, halloumi and pesto, then bake for a final 10-15 mins, until golden
