Ingredients
- ½ x 250g pack Co-op egg noodles
- 1 tbsp rapeseed oil
- 2 mixed peppers, chopped
- 1 medium Co-op British carrot, cut into thin batons
- 2 garlic cloves, chopped
- 3 spring onions, sliced diagonally
- 80g Co-op British red cabbage, thinly sliced
- 200g leftover roast beef, cut into strips, or 2 x 100g packs
- Co-op Irresistible roast beef topside
- 120g sachet Co-op teriyaki stir fry sauce
- 1 red chilli, thinly sliced (optional)
- Few coriander sprigs, leaves only
Method
- Cook the noodles according to the pack instructions and set aside
- Heat the oil in a large frying pan or wok
- Stir-fry the peppers and carrot over a high heat for 3-4 mins
- Reduce the heat to medium and add the garlic, spring onion and cabbage
- Cook, stirring, for 3-4 mins until the cabbage starts to soften
- Add the beef, noodles and teriyaki sauce, with 2 tbsp water
- Cook until heated through
- Serve sprinkled with the chilli, if using, and the coriander
