Teriyaki beef & pepper noodle bowls

  • ½ x 250g pack Co-op egg noodles
  • 1 tbsp rapeseed oil
  • 2 mixed peppers, chopped
  • 1 medium Co-op British carrot, cut into thin batons
  • 2 garlic cloves, chopped
  • 3 spring onions, sliced diagonally
  • 80g Co-op British red cabbage, thinly sliced
  • 200g leftover roast beef, cut into strips, or 2 x 100g packs
  • Co-op Irresistible roast beef topside
  • 120g sachet Co-op teriyaki stir fry sauce
  • 1 red chilli, thinly sliced (optional)
  • Few coriander sprigs, leaves only


  1. Cook the noodles according to the pack instructions and set aside
  2. Heat the oil in a large frying pan or wok
  3. Stir-fry the peppers and carrot over a high heat for 3-4 mins
  4. Reduce the heat to medium and add the garlic, spring onion and cabbage
  5. Cook, stirring, for 3-4 mins until the cabbage starts to soften
  6. Add the beef, noodles and teriyaki sauce, with 2 tbsp water
  7. Cook until heated through
  8. Serve sprinkled with the chilli, if using, and the coriander
