Ingredients

For the cake

  • 200g Co-op unsalted butter, softened, plus extra for greasing 
  • 200g Fairtrade caster sugar 
  • 3 Co-op large free range eggs 
  • 100g Co-op low fat natural yogurt 
  • 200g Co-op self raising white flour 
  • 1 tsp baking powder 
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 200g ground almonds
  • 100g Co-op apples, grated

For the topping

  • 10g Co-op unsalted butter, melted 
  • 30g Co-op flaked almonds 
  • 20g Fairtrade caster sugar 
  • ½ tsp ground cinnamon 
  • 150g Co-op apples, cut into 1cm cubes 

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Grease and line a 22cm loose-bottomed cake tin with greaseproof paper
  3. Put all the cake ingredients except the apple in a large bowl and beat together with an electric whisk until the mixture is smooth
  4. Stir in the grated apple, then tip into the prepared tin and spread out evenly
  5. Bake in the oven for 1 hour
  6. In a separate bowl, mix together all the ingredients for the topping
  7. After an hour, remove the cake from the oven and spoon over the topping mixture
  8. Bake for a further 15-20 mins, until the topping is golden and the cake is cooked through
  9. Allow the cake to cool for a few minutes in the tin before removing
  10. Serve warm or at room temperature
