Ingredients
- 2 tsp Co-op smooth peanut butter
- 1 lime, cut into 6 wedges
- 1 tsp Co-op light soy sauce
- 1 tsp sesame oil
- 1 red pepper, finely sliced
- ¼ red cabbage, finely sliced
- ¼ cucumber, finely sliced
- 1 carrot, grated
- 2 cooked chicken breasts, shredded
- ½ red chilli, deseeded and finely sliced
- 2 Co-op spring onions, finely sliced
- Small handful mint leaves (optional)
Method
- Make a dressing by whisking the peanut butter and the juice from 4 of the lime wedges with the soy sauce, sesame oil and 1 tsp of water until smooth
- Put the red pepper, cabbage, cucumber, carrot and chicken in a bowl, then pour over the dressing and mix
- Divide between 2 bowls then scatter over the chilli, spring onion and mint, if using
- Serve with the remaining lime wedges
