Ingredients

  • 2 tsp Co-op smooth peanut butter
  • 1 lime, cut into 6 wedges
  • 1 tsp Co-op light soy sauce
  • 1 tsp sesame oil
  • 1 red pepper, finely sliced
  • ¼ red cabbage, finely sliced
  • ¼ cucumber, finely sliced
  • 1 carrot, grated
  • 2 cooked chicken breasts, shredded
  • ½ red chilli, deseeded and finely sliced
  • 2 Co-op spring onions, finely sliced
  • Small handful mint leaves (optional)

Method

  1. Make a dressing by whisking the peanut butter and the juice from 4 of the lime wedges with the soy sauce, sesame oil and 1 tsp of water until smooth
  2. Put the red pepper, cabbage, cucumber, carrot and chicken in a bowl, then pour over the dressing and mix
  3. Divide between 2 bowls then scatter over the chilli, spring onion and mint, if using
  4. Serve with the remaining lime wedges
