Ingredients

  • 2 baking potatoes
  • 1/2 red onion, chopped
  • 1 tbsp vegetable oil
  • 1 clove garlic, finely chopped
  • 1/2 tsp chilli flakes
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp ground coriander
  • 400g can chickpeas, drained and rinsed
  • 1/2 tbsp tomato purée
  • 400g can Co-op chopped tomatoes
  • 200g baby spinach

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Prick the potatoes all over and bake directly on the middle shelf of the oven for 1 hour 15 mins, until crispy
  3. Meanwhile, fry the onion in the oil for 5 mins
  4. Add the garlic, chilli flakes, paprika, cumin and coriander, and fry for 1 minute more
  5. Add the chickpeas, tomato purée, chopped tomatoes, and 200ml water
  6. Season, then simmer for 30 mins
  7. Add the spinach for the last minute of cooking
  8. Serve the baked potatoes topped with the spicy chickpea mixture
