Ingredients
- 2 baking potatoes
- 1/2 red onion, chopped
- 1 tbsp vegetable oil
- 1 clove garlic, finely chopped
- 1/2 tsp chilli flakes
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp ground coriander
- 400g can chickpeas, drained and rinsed
- 1/2 tbsp tomato purée
- 400g can Co-op chopped tomatoes
- 200g baby spinach
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Prick the potatoes all over and bake directly on the middle shelf of the oven for 1 hour 15 mins, until crispy
- Meanwhile, fry the onion in the oil for 5 mins
- Add the garlic, chilli flakes, paprika, cumin and coriander, and fry for 1 minute more
- Add the chickpeas, tomato purée, chopped tomatoes, and 200ml water
- Season, then simmer for 30 mins
- Add the spinach for the last minute of cooking
- Serve the baked potatoes topped with the spicy chickpea mixture
