Ingredients
- 2 Co-op Loved by Us sirloin steaks
- 2 tbsp sunflower oil
- 1/2 onion, peeled and finely sliced
- 1 red pepper, deseeded and sliced
- 125g mushrooms, sliced
- 75g reduced fat crème fraîche
- 1 tsp smoked paprika
- 2 tsp coarse grain mustard
Method
- Cook the rice just like it says on the pack, then drain
- Meanwhile, trim all the fat from the steaks then cut the lean meat into small strips. Set aside
- Heat 1 tbsp oil in a large frying pan and, over a medium heat, cook the onion, red pepper and mushrooms. Tip into a bowl
- Add the rest of the oil to the pan and cook the steak over a high heat until browned on all sides - about 4 minutes
- Mix the crème fraîche with the paprika and mustard and season with black pepper
- Add to the pan with the vegetables and cook for 2-3 minutes, stirring until hot and simmering
- Serve with the rice
