Blackcurrant and Sicilian lemon ice cream burger


Ice cream sandwiches get a makeover in this easy recipe - just swap cookies for brioche buns and top with homemade blackberry sauce.

100g Co-op Irresistible blackcurrant & Sicilian lemon ice cream 2 Co-op Irresistible brioche buns ½ x 150g pack Co-op British blackberries


  1. Take the ice cream out of the freezer for 10 mins to soften
  2. Halve the buns and toast the cut sides in a dry pan
  3. Blitz a the blackberries to a purée, then sieve
  4. Scoop the ice cream onto 2 bun halves, drizzle with the purée and decorate with the rest of the berries
  5. Add the bun tops and serve
