This traditional American dessert is similar to an apple crumble, but made with brioche crumbs and aromatic blueberries

Ingredients

  • 500g Co-op blueberries
  • Zest and juice of 1 lemon
  • 2 tbsp Co-op Fairtrade clear honey
  • 1 tbsp cornflour
  • 2 thyme sprigs, leaves only

FOR THE TOPPING: - 50g Co-op unsalted butter, - plus extra for greasing - 1 tbsp Co-op Fairtrade clear honey - 1 thyme sprig, leaves picked - 2 Co-op brioche burger buns - Co-op Irresistible blackcurrant and Sicilian lemon ice cream, to serve (optional)

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Lightly grease a 1-litre baking dish with butter from the topping
  3. Add the blueberries, half the lemon zest and all the juice, the honey, cornflour and thyme
  4. Mix well to coat, then cover tightly with foil and bake for 30 mins, until the berries are soft and a sauce has formed
  5. Take out of the oven
  6. Meanwhile, make the topping. Put the butter, honey, thyme and remaining lemon zest in a small pan and heat gently until melted
  7. Whizz the brioche into chunky crumbs and add to the melted butter mixture, then stir well
  8. When the blueberries have had 30 mins in the oven, stir them, then sprinkle the brioche mixture on top
  9. Return to the oven, uncovered, and bake for a further 12-15 mins, until bubbling round the edges, and golden and crisp on top
  10. Serve with a scoop of ice cream, if you like
