
Apple and raspberry crumble

Ingredients
- 3 Co-op British cooking apples, peeled, cored and sliced
- 2 tbsp white sugar
- 100g raspberries
- 50g Co-op unsalted butter, plus extra for greasing
- 100g Co-op self-raising flour
- 2 Co-op brioche finger rolls
- 70g light brown soft sugar
- 1 tsp cinnamon
- 6 scoops Co-op Irresistible clotted cream vanilla ice cream (optional)
Method
- Preheat the oven to 190℃/fan 170℃/Gas 5
- Place the apples in a saucepan with a splash of water and the white sugar, adding more if needed Heat gently for 10 mins
- Add the raspberries, and cook for a further couple of mins until the fruit is soft
- Lightly grease a baking dish, pour in the fruit and set aside to cool
- Meanwhile, blend the butter, flour, brioche rolls, brown sugar and cinnamon together until they’re the texture of breadcrumbs
- Sprinkle the topping over the fruit to cover, then cook for 25-30 mins
- Serve with a scoop of Co-op’s delicious Irresistible vanilla ice cream, if you like
