  • 150g leftover nut roast
  • Pinch chilli flakes
  • 1 tbsp Co-op red pepper houmous
  • 25g Feta
  • 1 Co-op demi baguette
  • 20g spinach
  • 2 tbsp Co-op fresh tomato salsa
  • For the salad:
  • 75g Co-op British red cabbage, finely sliced
  • 1 spring onion, sliced
  • 25g Co-op British carrot, peeled and grated
  • Juice of 1/2 lime
  • 1 tbsp flat leaf parsley, chopped


  1. Preheat the oven to 220°C/fan 200°C/Gas 7
  2. Line a baking tray with greaseproof paper
  3. Mix the nut roast together with the chilli flakes, houmous and Feta and form into 6 balls
  4. Place on the tray and cook for 8-10 mins until golden, crisp and fully heated through
  5. Meanwhile, mix together the salad ingredients and season
  6. Halve the baguette, slice open, then add the spinach, salad and falafel, and drizzle over the salsa
