
Persian style koftas

These quick, tasty veggie balls are great for lunchboxes too.

Ingredients
- 2 tbsp Co-op olive oil
- 1 onion, finely chopped
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp chilli flakes
- 1 clove garlic, finely chopped
- 2cm fresh ginger, grated
- 180g podded Co-op British broad beans
- 1/2 x 400g can Co-op chickpeas, drained
- 1 tbsp maple syrup
- 70g wholemeal breadcrumbs
- 2 Co-op soft tortillas
- 2 tbsp Co-op red pepper houmous
- 1 Co-op British little gem lettuce, shredded
Method
- Heat half the olive oil in a frying pan, add the onion and cook for 5 mins on a low heat to soften
- Add the coriander, cumin, chilli flakes, garlic and ginger and cook for 2 mins more
- Boil the broad beans for 3-5 mins until tender, drain, then blend with the chickpeas, syrup, breadcrumbs and onion. Once the mixture comes together, shape into 12 balls
- Heat the remaining olive oil in the pan and cook the koftas for 5 mins, rolling them gently until heated through
- Spread the middle of each tortilla with 1 tbsp houmous, add some lettuce and 6 kofta balls, then wrap up and serve
