Ingredients

  • 2 Co-op skinless chicken breasts (or 4 chicken thigh fillets)
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1 tsp ground paprika, plus extra for sprinkling over the top
  • 2 tbsp olive oil
  • 1/2 red onion, peeled
  • 1 yellow, orange or red pepper
  • 4 Co-op tortilla wraps
  • 4 tbsp Co-op reduced fat houmous
  • 2 handfuls young leaf spinach (or little gem lettuce leaves)
  • 2 handfuls fresh coriander, chopped

Method

  1. Slice the chicken into strips and put into a bowl with the spices and half the oil, mix together and then leave for 10 minutes
  2. Meanwhile, finely slice the red onion, then deseed and slice the pepper into strips
  3. Heat the remaining oil in the pan and fry the veg for 5 minutes
  4. Spoon the veg into a bowl and cover with foil
  5. Add the chicken strips to the same pan and fry for 10 minutes until cooked through and golden
  6. Warm the wraps then fill with the chicken and veg
  7. Add a dollop of houmous, some spinach or lettuce leaves and some chopped fresh coriander, then wrap and eat
