Liven up a midweek dinner with these easy chicken kebabs

  • 1 tbsp Co-op olive oil
  • Zest and juice of 1 lemon
  • 1 clove garlic, finely chopped
  • 1 tsp smoked paprika
  • 2 Co-op chicken breasts
  • 150g dried cous cous
  • 40g Co-op California raisins
  • Handful chopped fresh parsley (optional)


  1. Mix the oil, lemon juice, half the zest, the garlic and paprika together in a shallow dish
  2. Slice each chicken breast into 4 long strips, add to the marinade and toss to coat - if you have time, leave to marinate for up to an hour
  3. Place the cous cous in a shallow bowl and stir through the rest of the lemon zest and the raisins
  4. Pour over 240ml just-boiled water, stir, cover with clingfilm or a plate and leave for 5 mins before fluffing with a fork
  5. Fold through the chopped parsley (if using)
  6. Preheat the grill to medium-high
  7. Thread each strip of chicken onto a skewer, then place on a grill rack with a tray underneath
  8. Grill for 3-4 mins each side, or until completely cooked through
  9. Serve with the lemon and raisin cous cous
