Liven up a midweek dinner with these easy chicken kebabs

Ingredients
- 1 tbsp Co-op olive oil
- Zest and juice of 1 lemon
- 1 clove garlic, finely chopped
- 1 tsp smoked paprika
- 2 Co-op chicken breasts
- 150g dried cous cous
- 40g Co-op California raisins
- Handful chopped fresh parsley (optional)
Method
- Mix the oil, lemon juice, half the zest, the garlic and paprika together in a shallow dish
- Slice each chicken breast into 4 long strips, add to the marinade and toss to coat - if you have time, leave to marinate for up to an hour
- Place the cous cous in a shallow bowl and stir through the rest of the lemon zest and the raisins
- Pour over 240ml just-boiled water, stir, cover with clingfilm or a plate and leave for 5 mins before fluffing with a fork
- Fold through the chopped parsley (if using)
- Preheat the grill to medium-high
- Thread each strip of chicken onto a skewer, then place on a grill rack with a tray underneath
- Grill for 3-4 mins each side, or until completely cooked through
- Serve with the lemon and raisin cous cous
