Ingredients
- 385g diced chicken
- 2 peppers
- 2 heaped tbsp Thai red curry paste
- 300g microwave basmati rice
Method
- Deseed the peppers and cut into chunks
- Mix the chicken with the curry paste, cutting larger pieces in two
- Thread the meat and peppers onto 8 skewers, drizzle over a little olive oil and grill for 5 minutes on each side
- Cook the rice as directed, then serve
