Brie and berry salsa picnic loaf


Pair sweet and tangy strawberry salsa with rich slices of brie in this bruschetta style picnic sharer

  • 1 tbsp Co-op Fairtrade clear honey
  • 1 tbsp Co-op Irresistible balsamic vinegar of Modena
  • 250g Co-op British strawberries, diced
  • 2 Co-op Irresistible white baton baguettes, halved horizontally
  • 240g Co-op Irresistible Brie de Meaux, sliced into 5mm strips
  • 4 mint leaves, finely shredded (optional)


  1. Put the honey, vinegar and a generous grinding of black pepper in a bowl with the strawberries
  2. Stir well then set aside
  3. Preheat the grill to high
  4. Arrange the baguettes cut-side up on a large baking tray
  5. Grill for 1-2 mins until lightly toasted
  6. Turn over and repeat on the other side
  7. Remove, then top the cut sides with 5-6 Brie slices
  8. Return to the grill for a further 3-4 mins until the cheese is melted and bubbling at the edges
  9. Meanwhile, if using the mint, stir into the salsa, then season with more black pepper to taste
  10. Serve in a small bowl alongside the cheesy baguette halves
