  • 1 red onion, chopped
  • 2 tbsp Co-op olive oil
  • 100g pack Co-op British tenderstem broccoli
  • 3 Co-op British eggs
  • 50ml Co-op semi-skimmed milk
  • 2 tsp mustard
  • Freshly ground black pepper
  • 50g Co-op Irresistible Somerset vintage Cheddar, grated
  • 1 tsp dried oregano
  • 105g pack Co-op mixed leaf
  • salad bowl (optional)


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Mix the onion and oil together in an ovenproof baking dish and roast for 5 mins
  3. Meanwhile, cook the broccoli in boiling water for 2 mins, drain and add to the baking dish
  4. Whisk together the eggs, milk, mustard and some black pepper
  5. Pour over the broccoli then sprinkle the cheese and oregano on top
  6. Bake for 15 mins, grind over some more pepper and serve with the salad on the side, if using
