
Broccoli omelette bake

Ingredients
- 1 red onion, chopped
- 2 tbsp Co-op olive oil
- 100g pack Co-op British tenderstem broccoli
- 3 Co-op British eggs
- 50ml Co-op semi-skimmed milk
- 2 tsp mustard
- Freshly ground black pepper
- 50g Co-op Irresistible Somerset vintage Cheddar, grated
- 1 tsp dried oregano
- 105g pack Co-op mixed leaf
- salad bowl (optional)
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Mix the onion and oil together in an ovenproof baking dish and roast for 5 mins
- Meanwhile, cook the broccoli in boiling water for 2 mins, drain and add to the baking dish
- Whisk together the eggs, milk, mustard and some black pepper
- Pour over the broccoli then sprinkle the cheese and oregano on top
- Bake for 15 mins, grind over some more pepper and serve with the salad on the side, if using
