Caramelised onion and goat’s cheese swirls

  • 375g Co-op ready rolled puff pastry
  • 100g Co-op caramelised red onion chutney
  • 65g Co-op goat’s cheese
  • 50g Co-op pitted black olives
  • 50g Co-op sundried tomatoes
  • 1 tbsp thyme leaves
  • 25g Co-op parmesan wedge, grated


  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Unroll the puff pastry and cut it in half lengthways
  3. Spread the chutney from your leftovers over both sheets (50g on each), leaving a 1cm gap along each of the long edges
  4. Crumble over the goat’s cheese, then chop the black olives and sundried tomatoes in oil (drained weight, but reserve 1 tbsp oil) and scatter on top
  5. Sprinkle with the thyme leaves and parmesan
  6. Roll up each piece of pastry from the long edge into a tight swirl, then slice into 12
  7. Put on lined baking trays
  8. Brush with the reserved oil, then bake for 12-15 mins, until puffed and golden
  9. Allow to cool slightly before serving with extra chutney on the side for dipping
