
Cheat’s coconut prawn laksa

Ingredients
- 175g pack Co-op coconut and chilli prawns (in store 12 Dec)
- 125g fresh Co-op egg noodles
- ½ tbsp Co-op olive oil
- 4 spring onions, sliced
- 1 red chilli, deseeded and finely chopped
- ½ x 25g pack coriander, stalks and leaves chopped separately
- 2 tbsp Co-op Thai red curry paste
- ½ x 400ml can Co-op light coconut milk
- 300ml vegetable stock, made with ½ cube
- 150g pack Co-op sugar snap peas
- 50g frozen Co-op British garden peas
- Juice of 1 lime, plus wedges to serve
- 1 tbsp Co-op light soy sauce
Method
- Prepare the prawns according to the pack instructions
- Meanwhile, cook the noodles according to the pack instructions, then set aside
- Heat the olive oil in a large pan and cook the spring onion, chilli (reserving a little of both for garnish) and coriander stalks for 2-3 mins
- Stir in the curry paste and cook for 1 minute before pouring in the coconut milk and stock
- Bring to the boil, then simmer for 8-10 mins
- Add the sugar snap peas and garden peas, then cook for 2-3 mins
- Stir in the lime juice and soy sauce
- Divide the noodles between 2 bowls, followed by the sauce
- Top with the cooked prawns, then scatter over the coriander leaves, along with the reserved spring onion and chilli
- Serve with the lime wedges
