Ingredients

  • 175g pack Co-op coconut and chilli prawns (in store 12 Dec)
  • 125g fresh Co-op egg noodles
  • ½ tbsp Co-op olive oil
  • 4 spring onions, sliced
  • 1 red chilli, deseeded and finely chopped
  • ½ x 25g pack coriander, stalks and leaves chopped separately
  • 2 tbsp Co-op Thai red curry paste
  • ½ x 400ml can Co-op light coconut milk
  • 300ml vegetable stock, made with ½ cube
  • 150g pack Co-op sugar snap peas
  • 50g frozen Co-op British garden peas
  • Juice of 1 lime, plus wedges to serve
  • 1 tbsp Co-op light soy sauce

Method

  1. Prepare the prawns according to the pack instructions
  2. Meanwhile, cook the noodles according to the pack instructions, then set aside
  3. Heat the olive oil in a large pan and cook the spring onion, chilli (reserving a little of both for garnish) and coriander stalks for 2-3 mins
  4. Stir in the curry paste and cook for 1 minute before pouring in the coconut milk and stock
  5. Bring to the boil, then simmer for 8-10 mins
  6. Add the sugar snap peas and garden peas, then cook for 2-3 mins
  7. Stir in the lime juice and soy sauce
  8. Divide the noodles between 2 bowls, followed by the sauce
  9. Top with the cooked prawns, then scatter over the coriander leaves, along with the reserved spring onion and chilli
  10. Serve with the lime wedges
