Cherry galette


This French classic full of British fruit is great with yogurt and even better with ice cream.

  • 200g Co-op British cherries, stoned and halved
  • 1 tbsp demerara sugar
  • 1 tbsp Co-op plain flour
  • 2 tsp lemon juice
  • 100g puff pastry
  • 1/2 Co-op British egg, beaten


  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Line a baking tray with greaseproof paper
  3. Put the cherries in a bowl with half the sugar, the flour and the lemon juice, then gently mix
  4. Roll out the puff pastry and cut out a circle, using a side plate (about 20cm in diameter) as a guide, then place on the tray
  5. Spoon the fruit onto the pastry, leaving about 5cm around the edge
  6. Roughly fold the edge over the cherries, overlapping slightly as you go
  7. Brush the egg over the pastry and sprinkle the remaining sugar on top
  8. Bake for 35 mins, until the pastry is golden brown and cooked underneath
  9. Leave to cool slightly before serving
