Ingredients

  • 1 tsp olive oil
  • 4 rashers back bacon, diced
  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 3 garlic cloves, crushed
  • 1 tbsp plain flour
  • 1 bay leaf
  • ½ tsp dried parsley
  • 1.4 litres chicken stock, made with 2 stock cubes
  • 150g potatoes, peeled and cut into 1cm cubes
  • 400g can of chick peas
  • Crusty bread, to serve (optional)

Method

  1. Put the oil in a pan over a medium heat, and cook the bacon, onion, carrot and garlic for 5 mins, until softened
  2. Stir in the flour and cook for 2 mins more
  3. Add the bay leaf, parsley and stock, bring to the boil, then add the potatoes and simmer for 20 mins, or until tender
  4. Season to taste with black pepper, add the chick peas and cook for a further 2 mins to heat through
  5. Serve with crusty bread, if you like
