
Chicken and chutney sandwich

A filling doorstep sandwich that tastes fantastic made with hot or cold roast chicken

Ingredients
- 3 Co-op British chicken thigh fillets
- 4 tsp Co-op tomato & chilli chutney
- 4 slices Co-op bloomer bread
- 2 handfuls watercress
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Put the chicken in a roasting dish, drizzle with 1 tsp olive oil and roast for 30 mins, or until cooked all the way through
- Meanwhile, butter the bread and spread with the chutney
- Remove the skin from the chicken and discard, slice the thighs, then divide between the sandwiches along with the watercress
