  • 3 Co-op British chicken thigh fillets
  • 4 tsp Co-op tomato & chilli chutney
  • 4 slices Co-op bloomer bread
  • 2 handfuls watercress


  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Put the chicken in a roasting dish, drizzle with 1 tsp olive oil and roast for 30 mins, or until cooked all the way through
  3. Meanwhile, butter the bread and spread with the chutney
  4. Remove the skin from the chicken and discard, slice the thighs, then divide between the sandwiches along with the watercress
