Ingredients
- 2 Co-op British chicken breasts
- 50g breadcrumbs
- 20g Co-op Parmesan, finely grated
- Pinch smoked paprika
- 1 Co-op British egg
- 2 tsp Co-op olive oil
- 1 tbsp Co-op plain flour
- 150g Co-op dried spaghetti
- 1/2 x 500g jar Co-op Italian bolognese pasta sauce
- 12 pitted black olives
- 1 tbsp capers
- 75g Co-op chargrilled peppers in oil, drained and sliced
- Pinch chilli flakes
Method
- Preheat the oven to 200℃/fan 180℃/Gas 6
- Place the chicken breasts between 2 pieces of clingfilm and hit with a rolling pin to flatten down slightly
- On a plate, mix the breadcrumbs with the Parmesan and paprika. In a bowl, lightly beat together the egg and oil
- Put the flour in a third dish
- Coat the chicken in the flour, then the egg, then the breadcrumbs
- Place on a baking tray lined with greaseproof paper, and bake for 20 mins
- Meanwhile, cook the spaghetti according to the pack instructions
- Heat the pasta sauce in a pan with the olives, capers, peppers and chilli flakes
- Season to taste, then stir into the pasta and serve with the chicken
