Ingredients

  • 2 Co-op British chicken breasts
  • 50g breadcrumbs
  • 20g Co-op Parmesan, finely grated
  • Pinch smoked paprika
  • 1 Co-op British egg
  • 2 tsp Co-op olive oil
  • 1 tbsp Co-op plain flour
  • 150g Co-op dried spaghetti
  • 1/2 x 500g jar Co-op Italian bolognese pasta sauce
  • 12 pitted black olives
  • 1 tbsp capers
  • 75g Co-op chargrilled peppers in oil, drained and sliced
  • Pinch chilli flakes

Method

  1. Preheat the oven to 200℃/fan 180℃/Gas 6
  2. Place the chicken breasts between 2 pieces of clingfilm and hit with a rolling pin to flatten down slightly
  3. On a plate, mix the breadcrumbs with the Parmesan and paprika. In a bowl, lightly beat together the egg and oil
  4. Put the flour in a third dish
  5. Coat the chicken in the flour, then the egg, then the breadcrumbs
  6. Place on a baking tray lined with greaseproof paper, and bake for 20 mins
  7. Meanwhile, cook the spaghetti according to the pack instructions
  8. Heat the pasta sauce in a pan with the olives, capers, peppers and chilli flakes
  9. Season to taste, then stir into the pasta and serve with the chicken
