Ingredients

  • 1 tbsp Co-op olive oil
  • 1 small onion, finely sliced
  • 2 Co-op British chicken breasts
  • 1 clove garlic, finely chopped
  • 2 tbsp pesto
  • 600ml chicken stock
  • 150g Co-op spaghetti
  • 150g Co-op frozen peas
  • 100g Co-op spinach
  • Handful flat leaf parsley, chopped (optional)
  • Freshly ground black pepper
  • 10g Parmesan, grated

Method

  1. Put the oil in a large pan over a medium heat and cook the onion for 5 mins
  2. Slice the chicken into chunks, add to the pan and cook for a further 5 mins
  3. Add the garlic and pesto and stir before adding the stock
  4. Bring to the boil and then add the pasta
  5. Cover and cook for 10 mins
  6. Stir in the peas and cook with the lid off for 2 mins, then add the spinach and most of the parsley, if using
  7. Allow the spinach to wilt, season with black pepper and serve sprinkled with the Parmesan and the remaining parsley
