Ingredients
- 225g Co-op piccolo tomatoes, halved
- 2 tbsp Co-op olive oil
- 1/2 tsp dried mixed herbs
- 1 clove garlic, peeled and crushed
- 150g Co-op spaghetti
- 1 tbsp capers
- 12 Co-op pitted black olives, halved
- 40g Co-op Parmigiano Reggiano, finely grated
- Serve with extra cheese and a Co-op garlic baguette (optional)
Method
- Set your oven to 180°C/fan 160°C/Gas 4
- Mix the tomatoes, oil, herbs and garlic together in an ovenproof dish and roast for 20 minutes
- Meanwhile, cook the spaghetti like it says on the pack and drain, keeping a couple of spoonfuls of water
- Tip the pasta back in the pan and add the capers, olives, cheese, tomatoes and enough of the cooking water to make it saucy
- Toss together and heat through. Serve with some ground black pepper, extra cheese and garlic bread, if you like
