Spaghetti with roasted tomatoes

  • 225g Co-op piccolo tomatoes, halved
  • 2 tbsp Co-op olive oil
  • 1/2 tsp dried mixed herbs
  • 1 clove garlic, peeled and crushed
  • 150g Co-op spaghetti
  • 1 tbsp capers
  • 12 Co-op pitted black olives, halved
  • 40g Co-op Parmigiano Reggiano, finely grated
  • Serve with extra cheese and a Co-op garlic baguette (optional)


  1. Set your oven to 180°C/fan 160°C/Gas 4
  2. Mix the tomatoes, oil, herbs and garlic together in an ovenproof dish and roast for 20 minutes
  3. Meanwhile, cook the spaghetti like it says on the pack and drain, keeping a couple of spoonfuls of water
  4. Tip the pasta back in the pan and add the capers, olives, cheese, tomatoes and enough of the cooking water to make it saucy
  5. Toss together and heat through. Serve with some ground black pepper, extra cheese and garlic bread, if you like
