Ingredients

  • 230g pack Co-op Loved by Us British chicken breast fillets
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 1 red pepper, deseeded and cut into 1 cm pieces
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 150g Co-op easy cook long grain rice
  • 400g can green lentils, drained and rinsed

Method

  1. Cut the chicken into bite-size pieces
  2. Heat 1 tbsp oil in a large frying pan and cook the chicken until golden
  3. Meanwhile, heat another tbsp oil in a large saucepan, add the onion and cook over a medium heat, until softened
  4. Add the pepper and cook for another 2 minutes
  5. Stir in the cumin and coriander and cook for 1 minute, then add the rice and stir to coat it in the spices
  6. Then cook the rice just like it says on the pack
  7. Add the lentils and heat through before serving
