Ingredients
- 230g pack Co-op Loved by Us British chicken breast fillets
- 2 tbsp olive oil
- 1 small onion, chopped
- 1 red pepper, deseeded and cut into 1 cm pieces
- 1 1/2 tsp ground cumin
- 1 1/2 tsp ground coriander
- 150g Co-op easy cook long grain rice
- 400g can green lentils, drained and rinsed
Method
- Cut the chicken into bite-size pieces
- Heat 1 tbsp oil in a large frying pan and cook the chicken until golden
- Meanwhile, heat another tbsp oil in a large saucepan, add the onion and cook over a medium heat, until softened
- Add the pepper and cook for another 2 minutes
- Stir in the cumin and coriander and cook for 1 minute, then add the rice and stir to coat it in the spices
- Then cook the rice just like it says on the pack
- Add the lentils and heat through before serving
