
Chocolate and banana rice pudding

Ingredients
- 150g pudding rice
- 1 litre Co-op semi skimmed milk
- 2 tsp vanilla extract
- 1 tbsp light brown soft sugar
- 50g Co-op Fairtrade dark chocolate
- For the caramelised bananas:
- 1/2 tbsp Co-op unsalted butter, plus extra for greasing
- 3 tbsp light soft brown sugar
- 3 Co-op Fairtrade bananas, sliced
Method
- Preheat the oven to 150°C/130°C fan/Gas 2
- Rub a little butter over the inside of an ovenproof dish
- Put all the rice pudding ingredients into the dish and bake for 1 hour 15 mins, or until the rice is cooked and the surface is golden
- To make the topping, melt the butter in a frying pan, add the sugar and heat to melt
- Add the banana slices and leave for a few mins, turning once, until caramelised
- Top the rice pudding with the bananas and serve
