  • 150g pudding rice
  • 1 litre Co-op semi skimmed milk
  • 2 tsp vanilla extract
  • 1 tbsp light brown soft sugar
  • 50g Co-op Fairtrade dark chocolate
  • For the caramelised bananas:
  • 1/2 tbsp Co-op unsalted butter, plus extra for greasing
  • 3 tbsp light soft brown sugar
  • 3 Co-op Fairtrade bananas, sliced


  1. Preheat the oven to 150°C/130°C fan/Gas 2
  2. Rub a little butter over the inside of an ovenproof dish
  3. Put all the rice pudding ingredients into the dish and bake for 1 hour 15 mins, or until the rice is cooked and the surface is golden
  4. To make the topping, melt the butter in a frying pan, add the sugar and heat to melt
  5. Add the banana slices and leave for a few mins, turning once, until caramelised
  6. Top the rice pudding with the bananas and serve
