
Chorizo cod and cauliflower mash

The chorizo gives the fish a lovely smoky flavour, but for a milder taste, use Parma ham instead

Ingredients
- 2 slices Co-op spicy sliced chorizo
- 2 x 140g Co-op Irresistible Atlantic cod loins
- 1 tsp Co-op olive oil
- 175g cauliflower florets
- 2 tbsp reduced fat crème fraîche
- Freshly ground black pepper
- 125g Co-op spinach
- Serve with new potatoes (optional)
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Line the base of a shallow ovenproof dish with baking paper
- Wrap the chorizo round the cod loins and put in the dish
- Drizzle the oil over them and bake for 15-20 mins, or until the fish flakes easily
- Meanwhile, boil the cauliflower for 15 mins until soft
- Drain and then mash with the crème fraîche using a potato masher
- Season with pepper
- Stir fry the spinach in a nonstick pan for 2-3 mins, until wilted
- Serve the fish on a bed of the mashed cauliflower with the spinach, plus some new potatoes, if you like
