Chorizo cod and cauliflower mash


The chorizo gives the fish a lovely smoky flavour, but for a milder taste, use Parma ham instead

  • 2 slices Co-op spicy sliced chorizo
  • 2 x 140g Co-op Irresistible Atlantic cod loins
  • 1 tsp Co-op olive oil
  • 175g cauliflower florets
  • 2 tbsp reduced fat crème fraîche
  • Freshly ground black pepper
  • 125g Co-op spinach
  • Serve with new potatoes (optional)


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Line the base of a shallow ovenproof dish with baking paper
  3. Wrap the chorizo round the cod loins and put in the dish
  4. Drizzle the oil over them and bake for 15-20 mins, or until the fish flakes easily
  5. Meanwhile, boil the cauliflower for 15 mins until soft
  6. Drain and then mash with the crème fraîche using a potato masher
  7. Season with pepper
  8. Stir fry the spinach in a nonstick pan for 2-3 mins, until wilted
  9. Serve the fish on a bed of the mashed cauliflower with the spinach, plus some new potatoes, if you like
