Ingredients
- 30g Co-op flaked almonds
- ½ small Co-op British white cabbage, finely sliced
- ½ Co-op British savoy cabbage, finely sliced
- ½ small Co-op British cauliflower, florets separated and thinly sliced
- 1 Co-op Pink Lady® apple, cored and thinly sliced
- 1 small red onion, thinly sliced
- 50g dried cranberries or raisins
- 100g Co-op 0% fat Greek style natural yogurt
- 2 tbsp Co-op hot horseradish sauce
- Zest and juice of ½ lemon
- ½ x 25g pack flat leaf parsley, leaves only, chopped
Method
- Toast the almonds in a frying pan over a medium heat for 5 mins, until golden
- Set aside to cool fully
- In a large bowl, toss the white and savoy cabbage with the cauliflower, apple, onion and cranberries or raisins until well combined
- Whisk the yogurt, horseradish, lemon zest and juice, parsley, and 1 tbsp water in a small bowl
- Season, then drizzle over the slaw and massage in lightly with your hands
- Mix in the toasted almonds to serve
