- 2 tbsp Co-op light mayonnaise
- 2 tbsp Co-op fat free Greek style yogurt
- 2 tbsp maple syrup
- 200g Co-op British red cabbage, shredded
- 2 Co-op British carrots, grated
- 2 spring onions, chopped
- 50g Co-op dried apricots, chopped
- 75g Co-op walnuts, chopped
- Mix the mayo, yogurt and maple syrup together in a large bowl and season
- Add the red cabbage, carrot, spring onion, apricot and walnuts and toss together to coat.
